Sophie Superfood Star
A Healthy and Nourishing Granola Bar Recipe
A beautiful Golden girl who is a certified raw food chef, yogi, mama to two littles, and creator of the brand Philosophie Superfoods, invited us into her charming nest to make us some healthy snack bars. Being around Sophie Jaffe with her movie star looks and boundless energy, is good motivation to start incorporating super foods in our diets. Philosophie began when her clients wanted a piece of her sunshine, so she started blending and shipping her concoctions of ingredients like organic acai, organic goji, organic pomegranate, camu camu, mangosteen, maca and more. She now carries various superfood powders, cleanses, butters and shake blends on her site. More and more we hear how we must incorporate powerful ingredients in our diets since we aren’t getting enough minerals and vitamins due to soil depletion. Adding vitamin C rich ingredients like camu camu and energetic plants based elements like spirulena, can really enhance our energy levels in a supportive way. Sophie showed us how to make delicious granola bars that are chock full of mineral rich ingredients. These are great to eat after a workout, for kids lunches, or just a go to snack in the afternoon. Read below for the recipe and a mini interview with Sophie ~

RECIPE:
These bars are made up of nourishing ingredients like magnesium-packed pumpkin seeds; fiber-rich, heart-healthy almonds; and berries, which contain disease-fighting antioxidants that help fend off viruses. Perfectly portable, they’re a sweet, nutty treat to boost energy in the morning or afternoon.
Gather:
1 packed cup pitted dates
1/4 cup raw honey
1/4 cup coconut oil
1/2 cup pepitas, plus more for topping
1/2 cup almonds, plus more for topping
1 1/2 cups rolled oats or quinoa
1 T Berry Bliss superfood powder
1 T Green Dream superfood powder
1/2 cup dried berries (gojis, cranberries, mulberries, or any dried fruit of choice), plus more for topping
1/4 cup shredded coconut
1/2 teaspoon salt
Do This:
Preheat oven to 325 degrees. Grease a shallow 9-inch square cake pan and line with parchment paper so the paper extends over the sides by about 2 inches.
Place all ingredients in a food processer and pulse until combined with a coarse, doughy texture. Press mixture firmly into the prepared pan, sprinkle with any extra nuts, seeds, or berries, and press toppings down firmly into mixture.
Bake for about 15 minutes or until browned lightly. Allow to cool in the pan before cutting into bars.
