Magical Matcha Cookies ~ Divine Alchemist Julia
A recipe for the delicious treats
When Julia Corbett paid us a visit, we were able to entice her to teach us how to make her incredibly delicious, healthy raw matcha cookies. Charlotte and I are big fans of her recipes since they don’t include too many ingredients and we can make them with out baking in our oven. Julia showed us how to create and roll the Matcha Balls into perfect speheres between our palms.
I have been on a matcha tea kick lately, loving the sweet, grassy flavor that is full of antioxidants, rich in chlorophyll, vitamins, boots metabolism and calms the mind. Compared to other green teas, Matcha is the highest in polyphenols and epigallocatechin gallate a specific antioxidants which neutralizes harmful free radicals. The lovely vibrant green color calls to me daily either as a treat or as a Matcha Latte (recipe coming soon).
Delicious cookies are all about the ingredients that are used. In this case Julia shared with us her special honey from Kauai which was like a golden ambrosia. This inspired me to start feeding my honey bees more tropical blossoms. The addition of Mucuna Pruriens make this treat a an actual mood changer, since Mucuna enhances brain function and is the from the Dopamine Bean. What could be better than these magical green wonders? So grateful to the lovely Julia for spreading her wisdom and light through raw delights.
Matcha Cookies
1 cup cashews
1 cup coconut flakes, fine cut
1/2 cup dates, pitted
3 T raw honey
2 T lucuma powder
1 tsp mucuna extract powder
2 tsp matcha powder
1/4 tsp pink salt
Process down cashews and coconut in a food processor, making a loose flour.
Add remaining ingredients to the food processor and pulse to mix the dough. Pulse until the dough is sticky.
Pour dough into a bowl and roll into 1 inch cookie balls. Serve or chill and serve.

Is there a substitute I can use for cashews?
I will check with Julia but can you consume nuts at all? If not then perhaps coconut but I will ask her. Thank you
