Malibu Farm ~ Part II
A Magical New Restaurant & Their Organic Recipes Cont.
My visit with Helene from Malibu Farm wouldn’t be complete without a few of her Swedish favorites. That day was made extra special once we ran into my favorite magical family Zen and Bunni and their sprite Alchemy. I love it when life flows smoothy with unplanned interconnectivity. As I was walking along the Malibu Pier to the cafe, I was texting with Bunni not realizing she and her family walking ahead of me. Our visit to Malibu Farm became all the more merrier with this unexpected surprise.
While her Swedish pancakes are in big demand, my photographer Mel and I also enjoyed the cauliflower pizza and marketgreens salad. Recipes below!
PIZZA – any store bought lavash bread.
goat cheese spread: 1/2 cup goat cheese, thin with 1 egg and 1/4 cup cream, or creme fraiche. You just want to thin the goat cheese so that it is easily spreadable. Then spread a generous layer of the goat cheese mixture over the lavash. Now top with a generous sprinkling of shredded three cheese blend, and top with finely shredded raw cauliflower. Drizzle with a little olive oil and a sprinkle of salt. Bake in 450 degree oven for 10 to 15 minutes or until brown and crispy around the edges.
SWEDISH PANCAKES:
in a blender or bowl combine:
3 eggs, 1 cup all purpose flour, 1 tablespoon sugar, 1 1/2 cup milk, 3 tablespoons butter. You can make them large crepe style – or using a mini pancake pan, into mini “plattar” type pancakes – which is my favorite. Cook over medium heat in a greased pan and flip over to cook opposite side. Serve with berries and whipped cream.
