M.A.K.E. Raw Cuisine
Raw food chef and author Matthew Kenney has opened a culinary institute and restaurant in Santa Monica that makes eating raw and healthy chic and exciting. The day I went I was treated to an incredible lunch and lovely chat with Matthew himself! Matthew Kenney is creating a food revolution by using state of the art techniques and equipment like dehydrators and smokers to make raw food a culinary experience. The culinary school in Santa Monica is the first and only classically structured raw and living educational center in the world. After eating a raw, living meal you actually feel the energetic life force of the earth moving through you. The kimchi dumpling with ginger foam and coriander, (shown in the photos) was so amazing in its texture and taste. I am ready to start cooking some the recipes from his cookbook Everyday Raw now that I’m a convert.

Shaved Celery Root Linguini, Mushrooms, Truffle Pumpkin Seeds, and Sage
This dish is elegant, complex, and delicious. Celery root makes a great substitution for al dente pasta without all the white flour. We recommend tossing the mushrooms in immediately before serving because they will stain the color of the noodles.
Celery Root
1 large celery root, peeled and shaved with julienne attachment on mandolin
1 tablespoon lemon juice 1 tablespoon olive oil
1 teaspoon sea salt
Mushrooms
3 cups cremini mushrooms, thinly
2 tablespoons tamari or nama shoyu 1 tablespoon olive oil
Truffle Pumpkin Seeds
1 cup pumpkin seeds
1 tablespoon truffle oil
1 teaspoon sea salt
1 tablespoon minced sage
1 tablespoon minced parsley
Celery Root—Toss all ingredients until well combined. Allow to marinate for 10 minutes. Drain before tossing with remaining ingredients.
Mushrooms—Toss together all ingredients and allow to marinate for a few minutes.
Truffle Pumpkin Seeds—Toss together all ingredients.
Assembly—Toss celery root, mushrooms, and pumpkin seeds together. Allow to marinate for 10 minutes before serving. Garnish with extra pumpkin seeds and minced herbs. Drizzle with additional truffle oil before serving.

The addition of probiotics gives this easy to love smoothie an extra digestive boost. This is a great smoothie for kids before school.
2 cups blueberries, fresh or frozen 1 banana
11⁄2 cups nut milk of choice, 2 probiotic capsules
Blend all ingredients until smooth. Serves 1–2
